Founded in 1960 in Seki, Shizu Hamono perfected a genuine kurouchi finish on stainless steel after two years of R&D, using no coats or dyes. Their Shizu Gen (玄) series—meaning both "black" and "expert"—features 33-layered Damascus steel with a VG10 stainless core. These knives combine sharpness and reliability with elegant yet durable wooden handles in the traditional "chestnut" shape. The hammer pattern on the blade prevents food sticking while cutting.Specifications:Knife Type: GyutoSteel Type: VG10 (Stain resistant steel)Blade Hardness: HRC 60-62Blade Type: Double edged bladeBlade Length: 240mm (9.4")Blade Height: 51.5mm (2")Blade Thickness: 2mm (0.1")Ferrule Material: Black Pakka woodHandle Material: Brown Pakka woodHandle Length: 128mm (5")Weight: 194g (6.8 ounces)Use and Care- Do not attempt to cut, hit or chop frozen products or bones.
