Santoku, which translates from Japanese as the "three virtues" knife, is a widely used multipurpose knife for cutting vegetables, meat, and fish. This knife is generally flatter and shorter than the gyuto knife, with a less pointed tip—a shape commonly referred to as a "sheep's foot."
