Chopsticks are essential for eating, cooking, and presenting Japanese food. Different ingredients and preparation methods require chopsticks of various materials, thicknesses, and lengths. Cooking chopsticks (saibashi) are typically made of bamboo or wood and measure about 30 centimeters long. This length keeps hands away from heat during cooking. They're commonly used for stirring and mixing ingredients.
Serving chopsticks (manabashi) are approximately 18 centimeters long with pointed tips. Made of metal or bamboo, they're used to arrange food like sashimi on serving plates. Bamboo manabashi are preferred for delicate dishes and lacquerware. Frying chopsticks (agebashi) feature heat-resistant handles and metal tips that don't absorb oil.
