A Project 2 Years In The Making
On my first trip to Japan back in 2023, I had to visit the famous Kappabashi Street where every chef and foodie goes. For me I was hunting for some Japanese knives. A friend recommended I check out Seisuke Knife as he had purchased a knife from there. I went in, met Hiro-san the owner and Kimmy-San the manager. We got to talking and as I was browsing for knives, they taught me about their craftsmen they work with and Takefu Knife Village which is a place in Echizen Japan where a collective of master knife craftsmen all work, learn & honour the craft of knife making.
Amongst the craftsmen, Yu Kurosaki was one that they mentioned the most & knowing my skills as a chef and Guinness World Record holder, suggested I highly look into his knives. Hiro-San graciously gifted me a Kurosaki knife that day & since then not only have I gotten to go to Takefu Knife Village, I was able to see Kurosaki-san’s shop and we have even been on several knife tours together along side the rest of the Seisuke Team.
When the idea of us collaborating together for a special project came up, it was a no-brainer. One of Japan and the world’s best knife craftsman with one of the world’s best knife skills chef… together creating a unique knife set that embodies both of us. Kurosaki-san rarely if ever makes custom knives or collaborations. If one if lucky to have him make a knife for them, it will take anywhere from 1-2 years minimum.
I am extremely grateful to have this opportunity to work with Kurosaki-san, Seisuke Knife and Urushi Artist Bowen to create 25 sets of these one of a kind knives. I have been using the blades for the last 2 years putting them to the test not only for my world records but also for television shows and the content I create. I was not going to put out a knife that didn’t meet my standards not just as a chef but also as a fan of knives. From the blade type, the shape, the size and the design of the handle and sheath. Every aspect of this collaboration is hand made & a reflection of everyone involved. I hope you enjoy them as much as we do.
