Crafted by master knife sharpener Shibata Takayuki, the Koutetsu line represents the pinnacle of Japanese cutlery artistry. Named after ironclad warships which their distinctive blade profiles resemble, these knives harness the exceptional properties of SG2 powdered stainless steel. The SG2 steel features a sophisticated composition of carbon, chromium, tungsten, molybdenum, and vanadium, resulting in a uniform microstructure that outperforms conventional forged steels.
