Kajin knives are handcrafted in Seki, a historic blade-making city in Gifu Prefecture. Their handmade knives combine exceptional sharpness with artistic design, produced in limited quantities. They specialize in powdered stainless steel that rivals traditional carbon steels in sharpness.
They use two main steels: Cobalt Special (1.1% carbon, 16% chromium) and ZDP189 (3.0% carbon, 20.0% chromium). Both steels contain tungsten and molybdenum for enhanced performance. While ZDP189 offers superior toughness and wear resistance, it requires more effort to sharpen.
